Lemon + coconut is the most delish combo! These protein balls are to die for. The perfect summer treat with healthy protein + fats…not to mention they’re vegan, gluten free, dairy free + refined sugar free!
INGREDIENTS
•1 cup cashew butter
•3/4 cup unsweetened shredded coconut + more for rolling
•2 scoops vanilla protein powder
•1/2 tsp vanilla extract
•2-3 tbsp pure maple syrup
•1 tbsp chia seed
•Juice from 1/2 lemon
•Lemon zest from half lemon + more for topping
•Pinch Himalayan sea salt
DIRECTIONS
1. Place all ingredients into a food processor until the mixture forms into a dough.
2. Roll into balls with slightly damp hands, place onto parchment paper.
3. Roll balls into shredded coconut + sprinkle with a little lemon zest. Store in an airtight container in the fridge. Enjoy! xo
