NINJA MUFFINS

‘Ninja’ Muffins! – gluten free, refined sugar free & dairy free!

. . . the secret ingredient = 🌱

I’m always looking for ways to sneak veggies in for my little guy & the whole household! I saw a few different green muffins out there so added my own spin and LOVE them! These are SO easy and I whipped them up in my @vitamix!

INGREDIENTS

•1 large ripe banana

•1/4 cup unsweetened almond milk

•1/4 cup almond butter

•1 tbsp ground flax

•1 free range egg

•1/4 cup pure maple syrup

•1/4 cup coconut sugar

•2 cups fresh baby spinach

•1 cup rolled or quick GF oats

•1/4 tsp baking soda

•1/2 teaspoon vanilla extract

•Sprinkle Himalayan sea salt

•Toppings: I used fresh blueberries, @enjoylifefoods chocolate chips & sliced banana

DIRECTIONS

1. Preheat the oven to 350 F and spray the muffins tins with coconut oil spray, or grease with coconut oil.

2. Place all ingredients but toppings into your Vitamix or highspeed blender.

3. Pour batter into the 12 tins and top with your desired topping. I did 4 blueberry, 4 chocolate & 4 banana.

4. Bake for about 15 minutes and allow to cool completely before removing. Store in an airtight container and after about a day move to the fridge.
