INGREDIENTS
- 1 large can organic chickpeas drained & rinsed
- 4 celery stalks, chopped
- 1/2 large red onion, chopped
- 1 red pepper, chopped
- 1/4 cup fresh cilantro or parsley
DRESSING
- 1 minced clove of garlic
- 1/4 cup olive oil
- 1/4 cup filtered water
- 2 tbsp Dijon mustard
- 1/4 cup fresh lemon juice
- 2 tbsp organic honey
- 1/2 tsp Himalayan salt
- 1/2 tsp pepper
- 1/2 tsp cayenne pepper (optional)
DIRECTIONS
- Combine all salad ingredients into a large bowl and toss
- Combine all dressing ingredients into a bowl and whisk until combined
- Add the dressing to chickpea salad, toss and let sit for 30 minutes to an hour before serving & enjoy!
