SIMPLE CHICKPEA SALAD

INGREDIENTS

  • 1 large can organic chickpeas drained & rinsed
  • 4 celery stalks, chopped
  • 1/2 large red onion, chopped
  • 1 red pepper, chopped
  • 1/4 cup fresh cilantro or parsley

DRESSING

  • 1 minced clove of garlic
  • 1/4 cup olive oil
  • 1/4 cup filtered water
  • 2 tbsp Dijon mustard
  • 1/4 cup fresh lemon juice
  • 2 tbsp organic honey
  • 1/2 tsp Himalayan salt
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper (optional)

DIRECTIONS

  • Combine all salad ingredients into a large bowl and toss
  • Combine all dressing ingredients into a bowl and whisk until combined
  • Add the dressing to chickpea salad, toss and let sit for 30 minutes to an hour before serving & enjoy!
